Apple Card Notifications?
There does not appear to be anyway to receive notifications regarding payments or balances. This seems hard to believe. Does anyone know how to set notifications up?

You need to have Notifications enabled in you Apple Card in the Wallet App.
You will also want to go to Settings >> Notifications >> Wallet >> and adjust and/or enable the Notification services you want to receive.
Emails are sent to all account holders around the 2nd or 3rd of the month. Make sure your email is correct and your statement notices are not being directed to your Mail Trash. If you need help updating or verifying your email address, please contact Goldman Sachs Support Team,

Since you have it in wallet, it might be best to contact GS via chat or message from within wallet.
Something sounds amiss but it’s quite difficult to troubleshoot here w/o you sharing personal info. (a really bad idea)
Statements don’t generate ‘til the 1st of the month, presumably you’ve had the card since at least mid-March?
That said, everything else you mention IS included in a normally-functioning wallet.
Yes, the Apple card is in my Apple wallet. However there is no link to a statement. There is no way to set up notifications of statements or of purchases or of balances due. And the only purchase that I have made on the Apple Card does not show in the Apple wallet. It does show the payment that I made that brought the balance to zero but it has nothing to show what took the balance up from zero to begin with. The information is not on in the Apple wallet.
I am looking for notifications from Apple Card about statements, transactions, and balance due dates. None of this is available in the Wallet. I just bought an Iphone on the card and the purchase is not listed in the Wallet. I only found the purchase of the phone and statement by googling apple card and following the link on chrome. None of the links in icloud or appleid took me to anything other than applications for a new card.

I sounds from your reply that your AppleCard is NOT showing in your wallet.
Is this accurate?
If so it explains the “disconnect” we’re having.
if it’s not there … we’ll work on that underlying issue.
Do you mean in-addition to the quite complete info already provided within the iPhone’s wallet app?
