I never signed up for cloud storage, nor did I opt in while setting up my iPhone, but now apparently some photos/videos from my iPhone are there and no longer locally accessible. I want them back and will NOT purchase iTunes to do it.

If you had turned on Messages in iCloud & iCloud Photos, your content is automatically stored in iCloud and is available on all devices that use the same Apple ID
Okay - I just tried to go in and turn off messages as per the instructions in the links that were sent. But I can't because I never set up iCloud in the first place ("iCloud" is greyed out). I knew from the start that I did not want and so I never set it up. So how did it steal my files and how do I get them back?
Thank you for the prompt reply. My problem now is to try and recover some of the files that no longer locally available.
My photos/videos from my iPhone are in iCloud and not locally accessible.
