Apple Card application says my phone number invalid, but it’s correct. I only have one number

How did you remove the parentheses and hyphens from the number ?
The issue is that the phone number in the apple I.D. includes (parenthesis) around the area code, and hyphens in the body of the number, while the card application doesn't allow these. I dropped the hyphens and the parenthesis in the phone number, using just the number in a string and Bingo it works!
Try this -> Sign in to your Apple ID account page and edit your Apple ID details.
-> edit / check trusted phone number.
