I purchased and new MacBook Pro over 7 days ago and it had free 7 day coverage but that has expired but I go to extend it but says registration in progress and can not extend it

If you have AppleCare+ it will cover a large portion of accidental damage.

call AppleCare Support at 1-800-APLCARE (800-275-2273)
typically you have a 1-yr warranty, and can add AppleCare+ for an Additional 2-yrs therefore 3 yrs total.
with an option to extend after that:
