When I get into mail, about 75% of the time it appears to be frozen and will take 45 seconds or so to load. I’ve tried deleting and reinstalling my mail accounts but that hasn’t fixed it. Any ideas?

Try this -> Go to Settings -> Mail -> Privacy Protection -> Turn OFF Protect Mail Activity.
