Takes a bit longer to get to the login screen, does a quick disk repair before it fully boots up, and certain system caches get cleared and rebuilt, including dynamic loader cache, etc.
Login an launch the installer.
—Another possibility from the Terminal.app is upgrade your Big Sur to the current stable macOS 11.6.5 release before you try to proceed.
update using the command line, this will bypass the secure token/owner check from the Software Update pref pane:
sudo softwareupdate -i -a -R
(note your psswd will not echo, type it in anyway use the enter/return key to proceed)

-R Automatically restart (or shut down) if required to complete installation)
