Alert/Notification options
Is there a way to change the offerings of options in alert notifications? Sometimes I might want to not do something for a day or so and that option is no longer there.

No, afraid not. However, you are not alone in finding the offerings to be lacking. It's actually better than it was in the first iteration of Monterey. Somebody at Apple was definitely asleep at the wheel (still is) on this matter.
