When trying to repair my watch with my phone it gets to the your watch need to update to be paired, and then never does anything after that.
If the watch is still paired to your old phone you won't be able to set it up with your new phone,a watch can only be paired to one phone.
If this this how you reset the watch then the activation lock will still be on and you won't be able to pair or update to your new phone.

Ok so in the store I did the reset to factory settings in my watch. So now I’m trying to just get it to update. Because it won’t pair until my watch updates and it won’t do anything from there
