Hide My Email and Sign on with Apple

What are the differences between these two services and when should one be used over the other? Or can I stop using Sign on with Apple now that I have access to Hide My Email?

Sign In with Apple is like signing in with Google, Facebook, or one of the many authorization systems.

Apple is certifying that login is you and they handle the authentication. You are not setting up an account with the other company.

Hide My Email is for you to provide a unique email address to establish a username/contact with a third-party. This allows you to hide your actual email address from the world. When you start getting spammed at that unique address, you know exactly who sold or lost your contact info, and you can disable the email address.

If you need to provide contact information with your Apple authorization, you could choose to use the Hide My Email service to further anonymize your contact with the third party.

I have seen nothing but issues with these features introduced...

If you create an account with an app or visit a website that supports Sign in with Apple, you can choose to share your email address, if you're familiar with the app or website, or hide your email address, if you'd prefer more privacy. If you choose the Hide my Email option, only the app or website you created the account with can use this random email address to communicate with you. Learn more about Sign in with Apple.
