There is no way to cancel YouTube premium from the YouTube app nor the YouTube website. YouTube says that I must go to the App Store and cancel from the Subscriptions menu in the Settings menu on iPhone. My iPhone does not even list YouTube Premium in the Subscriptions menu.
Everything is updated, web browser refreshed, cookies enabled, blah blah blah.

You must cancel it the way you subscribed to it. If you subscribed using the App Store go to Settings/[your name]/Subscriptions and it will be listed; you can tap on it and cancel it.
Alternatively, open the App Store app, tap on your icon in the upper right, then Subscriptions. It goes to the same place.
If it isn’t listed you subscribed using a Google or YouTube account. You need to cancel it there. You may have more than one Google account; check them all.
