How long does this process take place to transfer data from one ☝️ home to another?

It really depends on a number of factors, such as the method you use to transfer the data. Currently Apple has Quick Start or restore from a computer or iCloud backup. It would also depend on how much data needs to be transferred. And then there's the restoration of apps, which only happens via Wi-Fi or (now possibly) 5G.
