I use Safari on my MacBook Air M1 2020 and I always face and issue with a Google products - search, docs, etc.
For instance:
I do some request in a google and it doesn't load the page with search until I click on address line above... And all this kind of strange activity. What can it be?
Only YouTube works properly, at least looks like this.

We're happy to do all we can to help out with Safari. But you mention only YouTube works as it should, are there other apps you are having trouble with?
If we understand, you want to use Safari, and have Google as the main search engine. Is Google the homepage, or do you only go to Google when needed? If it's your homepage, make sure you have the selected how you want Safari to appear. See Change your homepage in Safari on Mac for details.
You can also Change Search preferences in Safari on Mac to customize to suit your needs.
If you are searching from the webpage Google.com and the search is not appearing as you like, you will want to reach out to Google Help and select the Google Search option.
The information above should help you with getting Safari and Google to work together as you want them too. As for the other apps, you will need to let us know more about what's happening, along with which apps they are.

I can't say that I use a bunch of google's tools. I mostly face an issue with searching, and also when I do something in account settings (like switching accounts), or in Google admin (where I manage my team accounts and so on).
I don't use Google as a home page, I go to it when I need it via Launchpad.
The main issue is when I do some search, it downloads a page according to my request, and then I can't time something else into the search line, or follow through the links that were displayed. I can only rewrite my search request only on safari's address line and the Google's line just doesn't react...
Or when I need to switch to another Google account and when I click to another account name, it also doesn't react or dowloand it very long or until I cklick on Sfari's address/search line again. Strange thing.
Or Google's sheets and tables, also work glitchy, and sometimes update and load too slow...
