Right now my wife tracks my phone to make sure I am ok and not in any trouble. Can I change the device to my I-Watch instead of my phone

Are you both members of a Family Sharing group? If not you might consider setting one up. Members of a family sharing group can see the location of all devices of other members and in this way your wife could see the location of your Apple Watch - and your iPhone.
From your description it seems that currently you are simply sharing locations between your iPhones in Find My. Your iPhone is the 'owner' of your location in Find My. As I understand it, your Apple Watch is not visible to your wife in this situation because it will appear only in your Devices tab in your iPhone's Find My.
