No, that is not necessary. You can remove the "old Apple Watch" after successfully pairing the "newer one." Just follow the steps listed in Set up your Apple Watch.

According to Set up and pair your Apple Watch with iPhone:
"Unpair Apple Watch
After syncing a new Apple Watch to my iPhone, both my old Apple Watch and new model remain synced to my iPhone. The old watch is soldiering on like it's in charge as well. I want to give the old watch away but don't want my data on it.
From a web browser,sign in to iCloud.com with your Apple ID.
Go to Find iPhone.
Click All Devices at the top of the screen.
Click your Apple Watch.
Click Erase [device]. Select Next until the device is erased.
Click Remove from Account.
