I’m trying to switch my iPad from my husbands name to mine. When I sign him out I get Copying iCloud data takes hours never ending

After doing so, try restoring the iPad to factory settings:
Restore your iPhone, iPad, or iPod to factory settings
If you have a backup of your previous data saved, you can restore using that info:
