i have iphone12 with apple id email1@hotmail.com but when i connect my apple watch its automatically pair with my very old id email2@gmail.com. Which i not use using now and i forget the password and even that gmail id not exist anymore.

Is the Watch new, or was it paired with an iPhone that had the Gmail account? If so, you are going to have to clear the Gmail account from the Watch. My guess is you no longer have the phone with the Gmail account. You are going to need to request the Activation Lock to be removed from the Watch. If you can't remember/gain access to the apple id that paired the watch to the phone.Take the watch and it's receipt with the serial number along with some photo id and any other proof of ownership to an Apple Store and request that they remove the Activation Lock for you.
