iPhone 12 Pro out of storage space

Hi I was just wondering if anyone knows why the iPhone 12 Pro Max says theres Insufficient space left when there’s actually a few hundred MB still left not being taken up by any of the listed category’s. For example I have the 256GB model the long bar at the top says 255.8GB used out of 256gb and when I try to force it beyond 255.8Gb by using apps that use a lot of cache the icons on the Home Screen vanish but they are still there to click and when I lock the phone it won’t unlock just jumps back to the Lock Screen. Is this 200mb old hidden data logs that makes it possible for companies like Dr Phone to recover deleted photos, cache logs and metadata?.

It’s not so much as needing the storage I’m actually trying to fill it up. I’m going to be selling the phone I know a factory reset is not a real wipe so I’ve purposely recorded a load of 4k Dolby videos to fill up the space which in theory should overwrite old Storage sectors that still have recoverable Remnants left behind from previous factory resets. I’m trying to figure out what this mysterious 200mb is as it could be the recoverable data that I’ve been trying to remove before I sell the phone.

This information doesn’t provide a in depth guide of how to properly wipe the data from

the phone. Software such as Dr would be able to recover everything even after the recommended factory reset. I’ve previously used this phone for all sorts of data sensitive activity such as business information, crypto wallets, screenshots of banking information etc and my national insurance number. I have to be 100% certain everything is wiped including that 200mb that I can’t access.
