iPhone 8 won’t stop speaking what I type
How to stop it. I’ve tried the suggestions but they have not worked
iPhone 8, iOS 15
Also, go to Settings>Accessibility>Spoken Content>Typing Feedback and turn off everything on that page.

A question: have you try this -> go to -> Settings -> Accessibility -> Speak Auto-Text -> Off ?
