How do I put a specific contact on do not disturb for texts without affecting phone calls from them?

Find the conversation with that person in Messages. Put your finger on it and pull to the left. Tap the bell with a line through it. That will silence notifications from them. Or, you can set their alert to "none" in their contacts entry.
