I just got a new iMac 24 inch and was wondering the Notification Bars are gone anyway to bring them back? Also anyway to make the background color from gray to another color? When I type ithere is always a gray backgrounf and want to change that ?

You click on the clock to show notifications center.
For the text background, check the highlight color in General system prefs.
So, you mean the background in menus.
There is no option to choose a color.
The things you can do:
make adjustments In System Preferences->Accessibility->Display, like reduce transparency or increase contrast; and of course you can choose the Light Mode instead of Dark. I do think that Dark Mode provides better contrast, though.
Assuming you mean the Desktop.
Change screen background: Right click any blank space on the Desktop > Change Desktop Background. Pick out what you want.
If you wish to add custom backgrounds, used the "+" button to navigate to the folder holding those images and select it.
As to "notification bars" please be more specific.
No way to get the 3 bars.

No not the background I am talking about the 3 bars in the corner of my old iMac and anyway to put them back on here?
Also when I clicked on something in my folder I double click nothing happens I have to right click and open new tab can I make it just double click on it not riight click to open new folder?

I use Firefox most of the time and have dark reader on there is there a free one to download for safari? The firefox one is free and thanks for that info.
I don’t understand… you showed a menu in Dark Mode. If you activate the reader in Safari it will show whitish text in a dark background, that does not require any extension…
