If we’ve understood correctly, when doing a web search in Safari on your iPhone you’re met with a prompt to sign in to Google. Does that pop-up right after tapping in the search field or at another time?
If it’s a pop-up that’s occurring while on websites such as the Apple site or the Communities site here, let’s have you try clearing the history and cookies - Clear the history and cookies from Safari on your iPhone, iPad, or iPod touch.
• To clear your history and cookies, go to Settings > Safari, and tap Clear History and Website Data. Clearing your history, cookies, and browsing data from Safari won't change your AutoFill information.
• To clear your cookies and keep your history, go to Settings > Safari > Advanced > Website Data, then tap Remove All Website Data.

Safari is not a search engine. If you don't want to use Google choose another.
Safari is not a search engine. The choices available are: Google, Bing, Yahoo, DuckDuckGo, Ecosia.
When clicking in Safari on search preferences on my iPhone I don’t have a choice of selecting Safari as my search engine, only lots of other search engines among them Google, which is selected already not by me
And I want none of them. My iPhone is an Apple product, and comes with Safari as a search engine, and it’s definitely a search engine. I am using it on my desktop at home as well. Both apple products are in sync

No, Safari is not a search engine. It is a browser. Browsers are apps that will, among other things, allow you to use search engines. Google is a search engine. Chrome is a browser made by the same company. Apple, however, has chosen not to create its own search engine.

My iPhone is an Apple product, and comes with Safari as a search engine, and it’s definitely a search engine.
