To unpair and pair your watch again and restore from the backup just created, follow these steps This should result in no loss of data. It deletes all temp and corrupted files and re-indexes the file system.

BTW, it will not remove the Activation Lock if that is what you are trying to do. Activation Lock is designed to prevent anyone else from using an Apple Watch if it's ever lost or stolen.

Activation Lock is an anti-theft feature that cannot be bypassed. Only the previous owner can remove the lock by using their Apple ID & password. Apple will not help you find the previous owner.
