How can I restore backups if itunes doesnt list any device backups?

I backed up my iphone 11 to itunes with encryption and erased my phone to fix an issue. When I tried to restore it, it failed a couple of times. I uninstalled and re-installed newer version of itunes on Windows. But the new installation of itunes does not recognize my older backups even when I add the path of backup folder under preferences. It just says the iphone has never been backed up to this PC :(

I have years worth of important data that I cannot love without (data within apps that you cant backup)

Please help!
