How to print a full year's worth of text conversation
What is the easiest way to print a full year's text conversation with date stamps for court using PC or iPhone 8? Will Apple ever make this easier?

The easiest way would be if you had a Mac, because there it is possible to print messages from the Messages app, without any hassle. Unfortunately, it is not possible to print iMessages from iPhone. From an iPhone, the only option is to take screenshots, and print them.
Otherwise, look for a 3rd party program for your PC. I know that the iMazing application has the ability to print the messages from your iPhone. The program can be found for both PC and Mac, but it is not free. However, you can try it for free. Do a Google search for iMazing and see if it's something you can use.
