Adding photos to Apple Wallet

it would be really great to be able to take a photo of important cards (insurance card, gym membership card, etc.) and be able to store in the digital wallet for easy access. As far as I can tell, this is not possible?

The Apple wallet is a quasi-legal document, so anything stored in it must be authorized by the issuer of the content. That’s why you can’t put just any image in it. What you can do is create an album in the Photos app and put all of your ID documents in it, then leave that album open in the Photos app, so when you tap Photos they all appear.
