Removing time stamp in notes

Can you remove the time stamp from notes before a heading please? I am using an iPhone12

How to protect note titles from accidental deletion (notes on iPhone)? I find that when I am deleting a number of items (typically in a grocery list) that the iPhone goes into word delete from character delete mode sometimes when I am not expecting it so goes much faster and on numerous occasions this has caused me to accidentally delete the title of the note. Is there a way to either disable the transition from character delete to word delete so it will be slower protect a piece of a note (the title in this case) so an extra step would be needed to delete it?

Go to Settings> Notes> New Notes Start With... Try the different options here to see what works best for you.
