We understand that the remaining hours for sunrise and sunset are incorrect on your Apple Watch.
Since you've noticed this happening, have you restarted both your companion iPhone and Apple Watch? If not, we'd suggest doing so.
Also, on your companion iPhone, you can go to Settings > General > Date & Time and check that Set Automatically is enabled.
Have you noticed this while using any other Watch Faces?
If you're still experiencing the same behavior, you can unpair your Apple Watch then pair it again to reset it:
Unpair and erase your Apple Watch - Apple Support
Set up and pair your Apple Watch with iPhone - Apple Support
If it continues, we'd suggest that you contact Apple directly to investigate this further with you. They'd be best suited to help: Contact - Official Apple Support
