I would like to know why my iPhone 11 overheats when playing games even if I take off my case. The only way to cool it down is to close any game i’m playing for it to return to a temperature without the risk of burning myself. quite annoying for a phone that is not that old.

That is typically normal. The phone is designed to let heat from use, especially intensive apps and processes, escape thru the case. See If your iPhone, iPad, or iPod touch gets too hot or too cold - Apple Support
