Locking a Note
I’m trying to figure out how to lock certain notes I have created within the Apple note app. Some of them have the option but not all of them do. Any suggestions?

Welcome to Apple Support Communities. If this happens with notes that have added tags, this is expected. "You can't lock a note that has a tag and you can't add a tag to a locked note." Check out Use Tags and Smart Folders in Notes on your iPhone, iPad, and iPod touch - Apple Support.
If these are not notes with tags, are they related to a particular email account? That might help to isolate this a bit.
