If you purchased your iPhone 12 Pro new from an Authorized Apple Reseller within the past 60 days you can purchase AppleCare + Buy an AppleCare plan - Apple Support

Assuming you already have AppleCare + coverage on your iPhone then starting on 26/05/2022 you have 30 days to extend your coverage -> Extend your AppleCare+ coverage - Apple Support
