My apple watch 6 is on the charger but i have to stand every hour before midnight to hit my stand goal. Will my iphone record my stand minutes if i hold it? How can I get my stand hours in?

No, your iPhone will not record the stand without wearing your watch. You must take the watch off the charger, record your stand, and then put it back on the charger. That is the only way.
