Using Old Chargers with Apple Watch 7

Will using the usb charging cables from my prior Apple Watches harm my Apple Watch 7 battery since it now comes with a usb-c charger?

No, it will not harm the watch. You will simply lose the fast charging feature. Since I charge mine overnight, every night - that feature is really not that important to me.

Awesome, thank you. I have chargers at home and work offices so I really didn't want to have to replace those.
