Recover deleted text messages
Is there a way I can recover text messages I deleted several weeks ago?

Probably not. If you're using iCloud Syncing for Messages, once the messages are deleted, they are gone.
If you're not using iCloud Syncing and you have a backup from that long ago, you can restore your phone from the backup.
Restore your iPhone, iPad, or iPod touch from a backup - Apple Support
Note that restoring your phone from the backup will overwrite everything currently on the phone.
