Hey there jcoxowens,
It sounds like you might be using iCloud to sync across your devices. If you do not want to sync certain content between your iPad and Mac, then you'll want to disable these features using the following steps:
On your iPad and iPhone, go to Settings > your name > iCloud, then choose content you want to sync here.
On your Mac, choose the Apple menu > System Preferences, then click Apple ID and select iCloud.
