Wanting to change Apple ID but not losing data

My iTunes account has my iPhone, my mothers and my fathers. I have iCloud turned off as well as other things as I have had the problem of our phones receiving phone call/messages from one of the other phones. I now really want to use iCloud as a security to not lose my photos again and would like to create them a seperate iTunes account. The only thing I don’t know how/ if it’s possible is if they can keep all there photos, notes, contacts, apps if switching to a new Apple ID. Please let me know how to achieve this.
