I cannot add my printer Epson L1800 to Mac OS 12

Always make sure that you only download drivers from official web sites for the printer manufacturer, or from another trustworthy source such as Apple.

seems they don't officially support higher than

Mac OS X 10.11 El Capitan

you can check if it's included in the gutenprint Gutenprint for Mac OS X (sourceforge.net)
