Restoring a iPhone from language
I restored my iPhone 7 and the language was in English/ Australian but now I cannot get the language back

What problem is this causing you exactly? if it is spellcheck, that is determined by your keyboard. Go to settings > general > keyboard > keyboards > add new keyboard and add Australian English to your list and remove anything else.
