Depends on what you want to use them for exactly.

You can sign in to a different Apple ID for each service that requires one, such as iTunes & App Stores, iCloud, Messages and FaceTime.

But you can only be signed in to one Apple ID for each service at any one time.

Singing out of an Apple ID, and signing in with a different one, may lock out the previous one for 90 days on that device. So make sure you really want to do this before attempting it.

You can update all your info for the Apple ID including your name and if you wanted to, change email address assigned to the Apple ID as well assuming its not an iCloud email address.

Log in to https://appleid.apple.com with your Apple ID to update your details.

Or follow the steps here to update the email address (if its not an iCloud address) you use for your Apple ID here:

This way apps remain tied to your Apple ID and all content is accessible since it remains the same Apple ID. link-> Change the email you use as your Apple ID - Apple Support

For things like sender name, you can edit that from the Messages App in your iOS devices by tapping on the (...) at the top right corner of the screen. You can also edit the name being sent when you write emails from the Email account itself. for iCloud emails you can edit it in Settings->Account(top of settings)->Name, Phone Numbers, Email.

Thank you, Phil ~ I have had my current Apple ID for nearly 20 and have recently remarried (changed last name). When I send messages/emails within Apps it defaults to my Apple Id and I can not change them. So I thought if I change my Apple ID it will change the default email address as well but then all my Apps will have to be manually changed… too much hassle. Perhaps you can suggest some solution?
