I'm trying to change the language of a block of text from British English to French. No probs in Pages, just go to the Inspector, hit the Text button + tab "More".

According to Apple, it should be the same in Numbers. Have a look at this:

The same in the offline Help. However - there is no such thing as a "More" button under Text in the Numbers Inspector.

Or am I being a doofus here? Anyone else noticed this? Does anyone know how to change this (other than through the Spelling context menu, which is tedious)?

    Pages is the only app that uses the Inspector method. All other Apple apps use Edit > Spelling and Grammar > Show Spelling and Grammar.

    As you note, the Help is just wrong.

    You can get to it with a keyboard shortcut of Command Colon
    Or, stated another way, the shortcut is Command Shift Semicolon
