A nefarious finder ... now armed w/ the user's trusted device AND it's passcode -- i.e. with "2-factors" now established (something you have + something you know)] -- would THEN be able to change the user's AppleID password as well by simply following this procedure:
Change your Apple ID password - Apple Support
At this point, the takeover of the user's Apple identity is complete ... and as you correctly point out ... in mere seconds.
But of course ... if he wants to remove his passcode ... it's his phone.
And folks wonder why I'm "wound so tight" re: Passcode Security. <wink>

No. It is a security feature that helps protect your data from being compromised. I recommend that you maintain the passcode on your iPhone.

Adding to what’s already been said… if your iPhone does not have a passcode to protect it, absolutely anyone who gets physical access to it for about 10 seconds could set a passcode on it. Then you would be locked out of your own device.
If you turn off your passcode, anyone who has your phone can make calls and access all of the personal data on your phone. If you are OK with that, then it's your call.

It’s an incredibly BAD idea … unless you have a very specific technical reason and even then, only for a VERY short-term period of time.
