Troubleshooting CarPlay Issues:

A. Successfully "Forget this Device":

Try unpairing the phone. Then, pair it back. Perform this while in while in park.

I don’t have CarPlay - hence using an AUX cable for playing music and making calls via my car stereo. it’s been working with no issue for years now and only since the update has it been an issue. hopefully apple can solve the issue for me."

Take this to a car dealership or a garage, seeing if they have services for setting this up.

We checked the AUX cable with hubbys phone and it works all good to make calls, SIRI commands etc via the car speakers. So it is most definitely an issue with my phone since the update and not the car or AUX cable."
