When my 6 month free trial of Apple Music is up, is it possible to continue with an annual subscription? or doesn't Apple do annual subscriptions?

Yes. Apple offers the annual option for Apple Music.
Before your free trial expires, go into your subscriptions and change the subscription form the Individual (1 Month) to the Individual (1 Year) option.
