Is it possible to delete existing IOS version to return to the older one....this update is driving me nuts with the Iphone X that I have

Gen 1 ipad After reading several posts, I believe I now have a Gen 1 iPad. I wiped it clean to start fresh and now the iOS is 9.4.5. I want to update back to iOS 12 so I can use it. What are my options?

"The updated software version should be 10.3.4"? What if I am already at 12.1.4? What am I supposed to do? I have an iphone 5. The useless notice from Apple instructs iphone 5 users to install a new version of ios and then states, "The updated software version should be 10.3.4" or else they threaten that the phone will stop working. What if I am already at 12.1.4? What am I supposed to do, downgrade? And how am I supposed to do that? Why can't the "geniuses" at Apple provide straightforward communications. Why should I have to update my version of ios anyway? I am extremely frustrated with Apple. If my iphone 5 stops working you can bet my next phone will not be an iphone. [Re-Titled by Moderator]
