Using iPhone
If I switch back to my old SE phone will I have the same updated software that I currently have or will it be the software that was on that phone?

Updating the iOS on one phone doesn’t do it on another. Also, if you have a backup from the newer iOS phone you won’t be able to restore it to the old one until you update the iOS.
