Looking to buy an Apple Watch for my daughter , just to track the basic activity and set a few reminders and mail alerts . She being in boarding has no access to phone but has her own iMac and WiFi in the campus. Will she be able to connect the watch to iMac ? Which model should I pick ? Not looking at a very high end model

Your daughter would need an iPhone to pair with the Apple Watch unless you use Family Setup. You can read more about that here: Set up Apple Watch for a family member. To use all these features, you'd need to purchase GPS + Cellular model for her.
