In macOS Big Sur or macOS Monterey, find the screen mirroring controls in Control Center.

Use Control Center on Mac - macOS user guide - Apple Support

Prefer to use the in-app AirPlay controls for apps that feature that: the TV app, QuickTime Player, and Safari web video.
