Yes you can connect your Bluetooth headphones to your Apple Watch, and the AirPods are one of the easier ones to connect.

The link provided by FireyJack is a good starting point. For the GPS only Apple Watch models, you have to actually transfer the songs to your Apple Watch so you can listen to them when away from your iPhone. Effectively, this is like having an iPod on your wrist (if you remember iPods).
