You can ask apple to remove the activation lock online on this page;

Remove the Activation Lock Here.

Or this;

If you can't remember/gain access to the apple id that paired the watch to the phone.Take the watch and it's receipt with the serial number along with some photo id and any other proof of ownership to an Apple Store and request that they remove the Activation Lock for you.

Hi

I have singed out from my old apple ID and erased my iphone then I created my apple ID and when I erased my apple watch and tried to pair my watch to my iphone and unlock it it requires apple ID and password that were used during set up and I dont remember neither email nor password

I have all the documents of my I watch plz help me to unlock my watch and pair it to my iphone thank you
