I am currently on my girlfriends iCloud plan for storage. Is she able to see all my personal business as well as business now that I’m on her iCloud family

No. She's only sharing storage with you. Your account, and by extension your files and all data in iCloud remain separate and private. She cannot see anything on your account at all.

As long as you’re not sharing an AppleID and thus iCloud account, then no. Family sharing of a storage plan still keeps everyone’s data private and tied exclusively to their specific AppleID used with iCloud.
