I was wondering what would happen if I choose to select a recovery key. It looks like that key would be the only way to get into my iCloud if I lose my phone, so if I make a key and forget it, would it still let my recovery contact help me??

So … if you manage to loose access to too many of your credentials - of which your Recovery Key is now one more - you may find yourself permanently locked-out of your AppleID.

No. Recovery contact is part of normal account recovery.
If you decide to use the more secure Recovery Key method then if you forget it then nobody can help you,, not your recovery contact, not even Apple.
